Tuscan-Style Slow-Cooked Beef Roast
Ingredients:
- Beef Roast:
- 3 to 4 pounds beef chuck roast
- Salt and pepper to taste
- 2 tablespoons olive oil
- Vegetables and Aromatics:
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 2 stalks celery, chopped
- 1 cup mushrooms, sliced (optional)
- Herbs and Spices:
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Liquids:
- 1 cup red wine
- 1 cup beef broth
- 1 can (14.5 ounces) diced tomatoes
- Garnish:
- Fresh parsley, chopped
Instructions:
- Prepare the Beef Roast:
- Season the beef roast generously with salt and pepper on all sides.
- Heat the olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned. This should take about 3-4 minutes per side. Remove the beef roast and set aside.
- Prepare the Slow Cooker:
- Add the chopped onion, garlic, carrots, celery, and mushrooms (if using) to the slow cooker.
- Sprinkle the dried rosemary, thyme, oregano, and bay leaf over the vegetables.
- Add Liquids and Beef:
- Pour the red wine and beef broth over the vegetables and herbs.
- Add the can of diced tomatoes, including the juice.
- Place the seared beef roast on top of the vegetable mixture in the slow cooker.
- Cook:
- Cover the slow cooker with the lid and set it to cook on low for 8 to 10 hours, or until the beef is very tender and easily shreds with a fork.
- Serve:
- Once cooked, remove the bay leaf and discard.
- Carefully transfer the beef roast to a cutting board and shred it using two forks.
- Return the shredded beef to the slow cooker and mix it with the vegetables and juices.
- Taste and adjust seasoning with salt and pepper if needed.

- Garnish with freshly chopped parsley before serving.
