Ingredients:
- 2 lbs (900 g) beef chuck, cut into 1-2 inch cubes
- 3 tbsp vegetable oil
- 1 large onion, chopped

- 4 cups beef broth
- 1 cup Guinness stout (or another dark beer)
- 1 cup water
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp sugar
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 large carrots, peeled and cut into chunks
- 3 large potatoes, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 1 cup chopped celery
- 2 tbsp chopped fresh parsley (for garnish)
Instructions:
- Brown the Beef:
- Heat 2 tablespoons of vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the beef in batches, making sure not to overcrowd the pot. Brown the beef on all sides. Remove the beef from the pot and set it aside.
