Tender Fluffy Biscuits Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon granulated sugar (optional)
- 6 tablespoons cold unsalted butter, cut into small cubes
- 3/4 cup cold buttermilk (plus extra for brushing)
Instructions:
- Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
- Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs. There should be small, pea-sized pieces of butter throughout the mixture.
- Add Buttermilk: Make a well in the center of the mixture and pour in the cold buttermilk. Stir gently with a fork or a spatula until the dough just comes together. Do not overmix; the dough should be slightly sticky and shaggy.
- Knead the Dough: Turn the dough out onto a lightly floured surface. Gently knead it a few times (about 5-6 times) to bring it together. Pat the dough into a rectangle about 1/2-inch thick.
- Fold the Dough: Fold the dough in half, then in half again, and pat it out to a 1/2-inch thick rectangle. Repeat this folding process 2-3 times to create layers, which will help make the biscuits flaky.
- Cut the Biscuits: Using a floured biscuit cutter (about 2-3 inches in diameter), cut out the biscuits. Press straight down without twisting to ensure they rise evenly. Gather the scraps, pat them out again, and cut more biscuits until all the dough is used.
- Bake: Place the biscuits on the prepared baking sheet, close together but not touching. Brush the tops with a little extra buttermilk for a golden finish.
- Bake in Preheated Oven: Bake for 12-15 minutes, or until the biscuits are golden brown on top.
