Taco Rice Recipe
Ingredients:
For the Taco Meat:
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or homemade seasoning mix)
- 1/2 cup water
- 1 small onion, finely chopped (optional)
- 2 cloves garlic, minced (optional)
- Salt and pepper to taste
For the Rice:
- 2 cups white rice (or brown rice, if preferred)
- 4 cups water (or as per rice package instructions)
- Pinch of salt
Toppings:
- Shredded lettuce
- Diced tomatoes
- Shredded cheese (cheddar or Mexican blend)
- Sliced green onions
- Salsa
- Sour cream
- Guacamole
- Jalapeños (optional)
- Fresh cilantro (optional)
Instructions:
- Prepare the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a medium pot, bring 4 cups of water to a boil. Add a pinch of salt.
- Add the rice, reduce the heat to low, cover, and let it simmer for about 15-20 minutes (follow the package instructions for your rice).
- Once cooked, fluff the rice with a fork and set aside.
- Cook the Taco Meat:
- In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
- If using, add the chopped onion and minced garlic to the meat and sauté until the onion is translucent.
- Stir in the taco seasoning and 1/2 cup of water. Mix well and let it simmer for about 5 minutes until the sauce thickens and coats the meat. Add salt and pepper to taste.
- Assemble the Taco Rice:
- Spread a layer of cooked rice on individual serving plates.
- Top the rice with a generous portion of taco meat.
- Add shredded lettuce, diced tomatoes, shredded cheese, sliced green onions, and any other toppings you prefer.
- Drizzle with salsa, add a dollop of sour cream, and top with guacamole if desired.
- Serve and Enjoy:
- Garnish with fresh cilantro and jalapeños if you like a bit of extra heat.
- Serve immediately and enjoy your homemade taco rice!
