Steak with Creamy Mushroom Sauce
Ingredients:
For the Steak:
- 4 beef steaks (ribeye, sirloin, or your preferred cut)
- Salt and black pepper to taste
- 2 tablespoons olive oil or vegetable oil
- 2 cloves garlic, smashed
- 2 sprigs fresh thyme or rosemary (optional)
For the Creamy Mushroom Sauce:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced (cremini, button, or a mix)
- 1/2 cup (120ml) white wine or beef broth
- 1 cup (240ml) heavy cream
- 1 teaspoon Dijon mustard (optional)
- 1/2 cup (50g) grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Steaks:
- Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature.
- Pat the steaks dry with paper towels. Season generously with salt and black pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat until hot but not smoking.
- Add the steaks to the skillet and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness.
- During the last minute of cooking, add the smashed garlic cloves and thyme or rosemary sprigs to the skillet for added flavor.
- Remove the steaks from the skillet and let them rest on a plate, covered with foil.
- Make the Creamy Mushroom Sauce:
- In the same skillet, reduce the heat to medium and add the butter and olive oil.
- Once the butter has melted, add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms are browned and any liquid has evaporated, about 5-7 minutes.
- Pour in the white wine (or beef broth) and cook, stirring, until reduced by half.
- Reduce the heat to low and stir in the heavy cream and Dijon mustard (if using). Simmer for a few minutes until the sauce thickens slightly.
- Stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.
- Serve:
- Place the steaks on serving plates and spoon the creamy mushroom sauce over the top.
- Garnish with chopped fresh parsley.
- Serve immediately with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad.
