Here’s a delicious recipe for spinach-stuffed pastry. It’s a perfect appetizer or snack, and it can be made with either puff pastry or phyllo dough.
Spinach Stuffed Pastry Recipe
Ingredients:
- 1 package puff pastry or phyllo dough, thawed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 oz (280g) fresh spinach, washed and chopped (or 1 package frozen spinach, thawed and drained)
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 large egg
- Salt and pepper to taste
- 1/4 teaspoon ground nutmeg (optional)
- 1 egg (for egg wash)
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the filling:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the chopped spinach to the skillet and cook until wilted if using fresh spinach, or until heated through if using frozen spinach. Make sure to cook off any excess moisture.
- Remove the skillet from heat and let the spinach mixture cool slightly.
- Mix the filling:
- In a large bowl, combine the ricotta cheese, crumbled feta cheese, grated Parmesan cheese, and one egg.
- Add the cooled spinach mixture to the bowl and mix well.
- Season with salt, pepper, and ground nutmeg (if using).
- Assemble the pastries:
- Roll out the puff pastry or lay out a sheet of phyllo dough. If using phyllo, brush each sheet with a little melted butter or olive oil and stack them to create layers.
- Cut the pastry into squares or rectangles, depending on your preference.
- Place a spoonful of the spinach and cheese mixture in the center of each square.
- Fold the pastry over the filling to form a triangle, rectangle, or any shape you prefer. Press the edges to seal them. You can use a fork to crimp the edges for a decorative touch.
- Bake the pastries:
- Place the stuffed pastries on a baking sheet lined with parchment paper.
- Beat the second egg and brush it over the top of each pastry to give them a golden, shiny finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed up.
- Serve:
- Let the pastries cool slightly before serving. They can be enjoyed warm or at room temperature.
Enjoy your homemade spinach-stuffed pastries!
