Here’s a recipe for Spicy Steak Fajitas:
Ingredients:
For the Marinade:
- 1/4 cup olive oil
- 1/4 cup lime juice (about 2-3 limes)
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- Salt and black pepper to taste
For the Fajitas:
- 1.5 lbs flank steak or skirt steak
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- Flour or corn tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro, lime wedges
Instructions:
- Marinate the Steak:
- In a bowl, whisk together olive oil, lime juice, minced garlic, soy sauce, Worcestershire sauce, cumin, chili powder, smoked paprika, crushed red pepper flakes, salt, and black pepper.
- Place the steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for best results.
- Prepare the Vegetables:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the sliced bell peppers and onion to the skillet. Sauté for about 5-7 minutes, until the vegetables are tender-crisp. Remove from the skillet and set aside.
- Cook the Steak:
- Remove the steak from the marinade, shaking off any excess. Discard the marinade.
- Heat the same skillet over medium-high heat. Add a bit more oil if needed.
- Cook the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the skillet and let it rest for a few minutes before slicing.
- Slice the steak against the grain into thin strips.
- Assemble the Fajitas:
- Warm the tortillas in a dry skillet or microwave.
- Place some of the cooked vegetables on each tortilla, followed by slices of steak.
- Add any optional toppings you prefer.
- Serve with lime wedges on the side.
Enjoy your spicy steak fajitas!
