Southern Potato Salad Recipe
Ingredients:
- 3 pounds potatoes (Yukon Gold or red potatoes)
- 1 cup mayonnaise
- 1/4 cup yellow mustard
- 1/4 cup sweet pickle relish
- 1/2 cup chopped celery
- 1/2 cup chopped onion (yellow or red onion)
- 4 hard-boiled eggs, chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional, for garnish)
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Cook the Potatoes:
- Wash and peel the potatoes. Cut them into 1-inch chunks.
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil over medium-high heat and cook until the potatoes are tender when pierced with a fork, about 10-15 minutes.
- Drain the potatoes and let them cool to room temperature.
- Prepare the Dressing:
- In a large bowl, combine the mayonnaise, mustard, sweet pickle relish, apple cider vinegar, sugar, salt, and black pepper. Mix well.
- Assemble the Salad:
- Add the cooled potatoes, chopped celery, chopped onion, and chopped hard-boiled eggs to the dressing. Gently fold to combine, ensuring the potatoes are well coated with the dressing.
- Chill the Salad:
- Cover the potato salad and refrigerate for at least 2 hours before serving. This allows the flavors to meld together.
- Serve:
- Before serving, sprinkle the top with paprika and fresh parsley if desired.
