Shrimp Scampi with Roasted Veggies Recipe
Ingredients
For the Roasted Veggies:
- 1 cup cherry tomatoes, halved
- 1 bell pepper (any color), sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
For the Shrimp Scampi:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 8 oz linguine or spaghetti
Instructions
- Prepare the Roasted Veggies:
- Preheat your oven to 425°F (220°C).
- Place the cherry tomatoes, bell pepper, zucchini, and red onion on a baking sheet.
- Drizzle with olive oil, and season with salt, pepper, and Italian seasoning. Toss to coat evenly.
- Roast in the preheated oven for 20-25 minutes, or until the veggies are tender and slightly charred.
- Cook the Pasta:
- While the veggies are roasting, bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Shrimp Scampi:
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan.
- Let the sauce simmer for about 2-3 minutes until slightly reduced.
- Add the red pepper flakes (if using), and season with salt and pepper to taste.
- Return the shrimp to the skillet and toss to coat in the sauce.
- Combine and Serve:
- Add the cooked pasta to the skillet with the shrimp and toss to combine.
- Stir in the roasted veggies and fresh parsley.
- Serve immediately, garnished with additional parsley and a squeeze of lemon juice if desired.
