Ingredients:
- 2 salmon fillets (about 200g each)
- 300g pasta (such as penne or fettuccine)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 1/4 cup fresh dill, chopped (or 2 teaspoons dried dill)
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Prepare the Salmon:
- Season the salmon fillets with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the salmon fillets for about 4-5 minutes on each side, until cooked through and golden brown. Remove from the skillet and set aside. Once cool, flake the salmon into large pieces.
