Rustic Beef Stew Recipe
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and cut into chunks
- 3 celery stalks, cut into chunks
- 4 large potatoes, peeled and cut into chunks
- 2 cups beef broth
- 1 cup red wine (optional)
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 2 tbsp all-purpose flour
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Beef:
- Season the beef cubes with salt and pepper.
- Heat 1 tbsp of olive oil in a large pot or Dutch oven over medium-high heat.
- Add the beef in batches, browning on all sides. Remove and set aside.
