Ingredients:
- 1 lb (450g) beef (such as chuck roast or brisket)
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground cloves
- Salt and pepper to taste
- 2 cups beef broth
- 1 cup chopped tomatoes (canned or fresh)
- 1 cup chopped cilantro, divided
- Corn tortillas
- Shredded cheese (such as Monterey Jack or Oaxaca cheese)
- Lime wedges

Instructions:
- Prepare the Beef:
- Trim excess fat from the beef and cut it into large chunks.
- Season generously with salt and pepper.
- Sear the Beef:
- Heat a large skillet or Dutch oven over medium-high heat.
- Sear the beef on all sides until browned. Remove from the skillet and set aside.
- Prepare the Sauce:
