For the Cream Cheese Frosting:
- 1 cup unsalted butter, softened
- 16 oz cream cheese, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
Instructions:
Making the Cake:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- Dry Ingredients: In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cocoa powder. Set aside.
- Wet Ingredients: In another bowl, combine the buttermilk, vegetable oil, eggs, vanilla extract, and white vinegar. Mix until well combined.
- Combine and Mix: Gradually add the wet ingredients to the dry ingredients, mixing on low speed until just combined. Add the hot water and mix until the batter is smooth.
- Color the Batter: Add the purple gel food coloring a little at a time until you reach your desired shade of purple. Mix thoroughly to ensure an even color.
- Bake: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Making the Frosting:
- Cream the Butter and Cream Cheese: In a large bowl, beat the butter and cream cheese together until light and fluffy.
- Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Vanilla: Add the vanilla extract and beat until smooth and creamy.
Assembling the Cake:
- Layer: Place one cake layer on a serving plate. Spread a layer of cream cheese frosting on top. Repeat with the second and third layers.
- Frost: Use the remaining frosting to frost the top and sides of the cake.
- Decorate: Decorate as desired. You can use purple sprinkles, edible glitter, or any other decorations to enhance the look.
- Chill: Refrigerate the cake for at least 30 minutes before serving to set the frosting.
