Penne with Italian Sausage
Ingredients:
- 1 lb (450g) penne pasta
- 1 lb (450g) Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup heavy cream
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, chopped (for garnish)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the penne pasta and cook according to the package instructions until al dente.
- Drain and set aside.
- Prepare the Sausage:
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Remove the sausage from its casings, crumble it into the skillet, and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
- Cook the Vegetables:
- Add the chopped onion to the skillet with the sausage and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another minute, stirring frequently.
- Make the Sauce:
- Pour in the crushed tomatoes and diced tomatoes with their juice.
- Stir in the dried basil, dried oregano, red pepper flakes (if using), salt, and pepper.
- Bring the sauce to a simmer and cook for about 15-20 minutes, allowing the flavors to meld together.
- Finish the Sauce:
- Stir in the heavy cream and let it simmer for another 5 minutes.
- Taste and adjust seasoning with salt and pepper as needed.
- Combine Pasta and Sauce:
- Add the cooked penne pasta to the skillet with the sausage and tomato sauce.
- Toss to coat the pasta evenly with the sauce.
- Serve:
- Divide the penne with Italian sausage among serving plates.
- Sprinkle with grated Parmesan cheese and garnish with fresh basil or parsley.
