Here’s a delicious recipe for Peach Grilled Pork Tenderloin:
Ingredients:
- 1 pork tenderloin (about 1 to 1.5 pounds)
- 2 ripe peaches, pitted and sliced
- 1/4 cup peach preserves
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and pepper to taste
Instructions:
Marinade:
- In a medium bowl, combine peach preserves, olive oil, soy sauce, balsamic vinegar, Dijon mustard, minced garlic, and thyme leaves. Mix well.
- Season the pork tenderloin with salt and pepper.
- Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the pork, reserving the other half for basting. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to penetrate the meat.
Grilling:
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Remove the pork tenderloin from the marinade and let any excess marinade drip off. Discard the used marinade.
- Grill the pork tenderloin for about 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F. Baste the pork with the reserved marinade during the last 5 minutes of grilling.
- During the last few minutes of grilling, place the peach slices on the grill and cook until they are tender and have grill marks, about 2-3 minutes per side.
Serving:
- Remove the pork tenderloin from the grill and let it rest for about 5 minutes before slicing.
- Slice the pork into medallions and arrange on a serving platter.
- Garnish with the grilled peach slices.
- Serve immediately and enjoy!
This dish pairs well with a fresh green salad or grilled vegetables for a delightful summer meal.
