- Blend the softened chiles with vinegar, garlic, cumin, oregano, black pepper, and cinnamon to form a smooth paste.
- Heat oil in a large pot over medium heat. Add the pork and cook until browned.
- Add the onion and sauté until translucent.
- Stir in the chile paste and cook for a few minutes until fragrant.
