Here’s a delicious recipe for mutton curry. This dish is rich, flavorful, and perfect for a hearty meal.
Ingredients:
- For the Marinade:
- 1 kg mutton, cut into pieces
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- For the Curry:
- 3 tbsp oil or ghee
- 2 large onions, finely chopped
- 3 tomatoes, finely chopped or pureed
- 2 green chilies, slit
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1-2 bay leaves
- 4-5 cloves
- 2-3 cardamom pods
- 1-inch cinnamon stick
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala powder
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Marinate the Mutton:
- In a large bowl, combine the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
- Mix well, ensuring the mutton pieces are well-coated with the marinade.
- Cover and refrigerate for at least 2 hours, preferably overnight for best results.
- Prepare the Curry:
- Heat oil or ghee in a large pot or pressure cooker over medium heat.
- Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
- Add the finely chopped onions and sauté until golden brown.
- Add ginger-garlic paste and slit green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
- Add the chopped or pureed tomatoes and cook until the oil separates from the mixture.
- Cook the Mutton:
- Add coriander powder, cumin powder, garam masala powder, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
- Add the marinated mutton pieces and mix well with the spice mixture. Cook for about 10 minutes, stirring occasionally until the mutton is browned on all sides.
- Add enough water to cover the mutton. If using a pressure cooker, cook for about 20-25 minutes after the first whistle on medium heat. If using a regular pot, cover and cook on low heat for about 1.5 to 2 hours or until the mutton is tender, adding more water if necessary.
- Once the mutton is cooked and tender, adjust the consistency of the gravy by adding more water if needed. Simmer for another 5-10 minutes.
- Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with steamed rice, naan, or roti.
