Here’s a delicious recipe for mutton curry:
Ingredients
For the Marinade:
- 1 kg mutton, cut into pieces
- 1 cup yogurt
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
For the Curry:
- 3 tbsp oil or ghee
- 2 large onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp fennel powder
- 2-3 bay leaves
- 4-5 cloves
- 2-3 cardamom pods
- 1 cinnamon stick
- 1 cup water (adjust as needed)
- Fresh coriander leaves, chopped (for garnish)
Instructions
Marinade the Mutton:
- In a large bowl, combine the mutton pieces with yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, and salt. Mix well.
- Cover and refrigerate for at least 2 hours, preferably overnight, to let the flavors meld.
Cooking the Curry:
- Heat oil or ghee in a large pot over medium heat. Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until aromatic.
- Add the finely chopped onions and cook until golden brown.
- Add ginger paste and garlic paste. Cook for another 2-3 minutes until the raw smell disappears.
- Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and oil starts to separate from the mixture.
- Add coriander powder, turmeric powder, red chili powder, fennel powder, and garam masala powder. Stir well and cook for a couple of minutes.
- Add the marinated mutton to the pot. Stir well to coat the mutton with the spice mixture.
- Cook for about 10-15 minutes, stirring occasionally, until the mutton starts to brown and the spices are well absorbed.
- Add water to the pot, bring it to a boil, then reduce the heat to low. Cover and simmer for about 1-1.5 hours, or until the mutton is tender and cooked through. Stir occasionally and add more water if needed to maintain the desired consistency.
- Once the mutton is cooked and the curry has thickened to your liking, turn off the heat.
- Garnish with fresh coriander leaves.
Serving
- Serve hot with steamed rice, naan, or roti.
