Low-Carb Sautéed Zucchini with Mushrooms
Ingredients:
- 2 medium zucchinis, sliced
- 1 cup mushrooms, sliced (any variety)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
- 1 tablespoon lemon juice (optional)
Instructions:
- Prepare the Ingredients:
- Wash and slice the zucchinis.
- Clean and slice the mushrooms.
- Mince the garlic and chop the onion.
- Heat the Pan:
- Heat olive oil in a large skillet over medium heat.
- Cook the Onions and Garlic:
- Add the chopped onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Sauté the Zucchini:
- Add the sliced zucchini to the skillet.
- Season with salt and pepper.
- Cook, stirring occasionally, for about 5-7 minutes until the zucchini starts to soften.
- Add the Mushrooms:
- Add the sliced mushrooms to the skillet.
- Continue to cook, stirring occasionally, until the mushrooms are tender and the zucchini is fully cooked, about 5 more minutes.
- Optional Lemon Juice:
- If desired, add a tablespoon of lemon juice to brighten the flavors.
- Garnish and Serve:
- Garnish with fresh parsley or basil, if desired.
- Serve hot as a side dish or a light main course.
