Here’s a delicious recipe for a Loaded Shrimp Baked Potato:
Ingredients:
- 4 large russet potatoes
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- 2 tablespoons butter
- 1/4 cup milk
- Optional: hot sauce, for serving
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and pierce each potato several times with a fork.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
- Cook the Shrimp:
- While the potatoes are baking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Add the shrimp to the skillet, sprinkle with paprika, salt, and pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Remove from heat and set aside.
- Prepare the Fillings:
- Once the potatoes are done baking, remove them from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently scoop out the insides into a mixing bowl, leaving a small border of potato around the skin.
- Add the butter and milk to the bowl with the scooped-out potato and mash until smooth. Stir in half of the shredded cheddar cheese and season with salt and pepper.
- Assemble the Loaded Potatoes:
- Spoon the mashed potato mixture back into the potato skins.
- Top each potato with the cooked shrimp, the remaining cheddar cheese, crumbled bacon, sour cream, and chopped green onions.
- Bake Again:
- Place the assembled potatoes back in the oven for about 10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool for a few minutes before serving.
- Optional: drizzle with hot sauce for an extra kick.
Enjoy your loaded shrimp baked potatoes!
