Lemon Garlic Parmesan Chicken and Rice Recipe
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon, juiced and zested
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (optional for garnish)
For the Rice:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika on both sides.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the chicken broth, lemon juice, and lemon zest to the skillet, scraping up any browned bits from the bottom.
- Stir in the Parmesan cheese and let the sauce simmer for about 3-4 minutes until slightly thickened.
- Cook the Rice:
- In a medium saucepan, combine the rice, chicken broth, olive oil, salt, and pepper.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
- Combine and Serve:
- Return the chicken breasts to the skillet with the sauce, spooning some of the sauce over the chicken to coat.
- Let the chicken simmer in the sauce for an additional 2-3 minutes to reheat and absorb the flavors.
- Serve the chicken over the cooked rice, garnished with fresh parsley if desired.
