Here’s a Keto-friendly recipe for Philly Cheesesteak Meatloaf:
Ingredients:
- 1 lb ground beef (80% lean)
- 1/2 lb ground pork (optional for added flavor)
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup shredded provolone or mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 large eggs
- 1/4 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp Worcestershire sauce (optional, ensure it’s low-carb)
Instructions:
- Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- Sauté vegetables: In a skillet, heat some oil over medium heat. Add diced onions, green peppers, and mushrooms. Cook until soft, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes. Set aside to cool.
- Mix the meatloaf: In a large bowl, combine ground beef, pork (if using), eggs, heavy cream, parmesan cheese, Worcestershire sauce, salt, pepper, onion powder, and garlic powder. Add the sautéed vegetables. Mix until everything is well incorporated.
- Layer the cheese: Divide the meat mixture in half. Place half of it into the loaf pan and press down evenly. Sprinkle half of the shredded cheese over the meat. Add the remaining meat mixture on top and press down to form the loaf. Finish with the remaining shredded cheese on top.
- Bake: Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until it reaches an internal temperature of 160°F (71°C).
- Cool and serve: Let the meatloaf rest for 10 minutes before slicing.
