Ingredients
For the Shells:

Instructions
Making the Shells:
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, sugar, and salt.
- Add Butter: Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Add Egg Yolk and Wine: Stir in the egg yolk and enough wine to form a dough. The dough should be stiff but smooth.
- Knead Dough: Turn the dough onto a floured surface and knead until smooth, about 5-7 minutes. Wrap in plastic wrap and let rest for about 1 hour.
- Roll Out Dough: Roll the dough out on a floured surface to about 1/8-inch thickness. Use a round cookie cutter (about 4 inches in diameter) to cut out circles.
- Form Shells: Wrap each circle around a cannoli form (a metal tube). Brush the edges with the egg white to seal.
