- 1 cup granulated sugar
- 3 large egg yolks
- 1/2 cup (1 stick) unsalted butter
- 1 tsp vanilla extract
- 1 1/2 cups sweetened shredded coconut
- 1 cup chopped pecans
Instructions
Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
- In a medium saucepan over medium heat, combine the butter and water. Stir until the butter is melted.
- Remove from heat and add the chopped German sweet chocolate, stirring until melted and smooth. Let cool slightly.
- In a small bowl, whisk together the buttermilk, eggs, and vanilla extract.
- Gradually add the chocolate mixture to the flour mixture, stirring until just combined.
- Stir in the buttermilk mixture until well blended.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
Make the Coconut-Pecan Frosting:
- In a medium saucepan, combine the evaporated milk, sugar, egg yolks, and butter.
- Cook over medium heat, stirring constantly, until the mixture is thickened and golden brown (about 12 minutes).
- Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
- Allow the frosting to cool to room temperature, stirring occasionally. It will continue to thicken as it cools.
Assemble the Cake:
- Once the cake is completely cooled, spread the coconut-pecan frosting evenly over the top.
- Let the frosting set slightly before serving.
