Ingredients
- For the Chicken Marinade:
- 1 lb (450 g) boneless, skinless chicken breasts, diced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- For the Fried Rice:
- 3 cups cooked and chilled rice (preferably day-old)
- 3 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, corn), optional
- 2 eggs, beaten
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Marinate the Chicken:
- In a bowl, combine diced chicken, soy sauce, oyster sauce, cornstarch, and vegetable oil. Mix well and let it marinate for at least 15 minutes.
- Prepare the Fried Rice:
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until it’s no longer pink, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tbsp of vegetable oil. Add minced garlic and chopped onion, sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add mixed vegetables (if using) and cook for another 2-3 minutes until they are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the chilled rice to the skillet, breaking up any clumps. Stir-fry for about 5 minutes until the rice is heated through.
- Return the cooked chicken to the skillet. Add soy sauce, oyster sauce, sesame oil, salt, and pepper. Mix everything well and stir-fry for another 2-3 minutes.
- Taste and adjust seasoning if necessary.

- Garnish with sliced green onions and serve hot.
