Exquisite Fruit Cream Cake Recipe
Ingredients:
Cake Layers:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, room temperature
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
Whipped Cream Frosting:
- 2 cups heavy whipping cream, cold
- ½ cup powdered sugar
- 1 tsp vanilla extract
Fruit Filling and Topping:
- 1 cup sliced strawberries
- 1 cup blueberries
- 1 cup raspberries
- 1 cup kiwi slices
- 1 cup mango slices
- Mint leaves (optional, for garnish)
Instructions:
Cake Layers:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
Whipped Cream Frosting:
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on high speed until stiff peaks form.
Assembly:
- Once the cakes are completely cooled, level the tops if necessary. Place one cake layer on a serving plate.
- Spread a generous layer of whipped cream frosting over the top of the first cake layer.
- Arrange a mixture of sliced strawberries, blueberries, raspberries, kiwi slices, and mango slices on top of the whipped cream layer.
- Place the second cake layer on top of the fruit filling. Frost the top and sides of the entire cake with the remaining whipped cream frosting.
- Decorate the top of the cake with the remaining fresh fruit in a beautiful pattern. Garnish with mint leaves if desired.
Serving:
- Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the frosting to set.
