Ingredients
- For the Steak:
- 4 beef tenderloin steaks (about 6-8 oz each, 1 inch thick)
- Salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- For the Sauce:
- 2 tablespoons unsalted butter
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1/4 cup brandy or cognac
- 1/2 cup heavy cream
- 1/4 cup beef broth
- 1 teaspoon fresh lemon juice
- 1 tablespoon fresh parsley, finely chopped (plus more for garnish)
- 1 teaspoon fresh chives, finely chopped
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Steaks:
- Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
- In a large skillet, heat the butter and olive oil over medium-high heat until hot but not smoking.
- Add the steaks and cook for about 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness.
- Remove the steaks from the skillet and set aside, keeping them warm.
- Prepare the Sauce:
- In the same skillet, add the butter and let it melt over medium heat.
- Add the chopped shallot and garlic, sautéing until soft and fragrant, about 2-3 minutes.
- Stir in the Dijon mustard and Worcestershire sauce, mixing well.
- Carefully add the brandy or cognac. If you’re comfortable, you can ignite it to burn off the alcohol (flambé), or let it simmer until the alcohol evaporates.
- Add the heavy cream and beef broth, stirring to combine.
- Let the sauce simmer and thicken, about 2-3 minutes.
- Stir in the lemon juice, parsley, and chives. Season with salt and pepper to taste.
- Combine and Serve:
- Return the steaks to the skillet, spooning some of the sauce over the top.
- Let the steaks warm through for about 1-2 minutes.
- Transfer the steaks to serving plates, spooning more sauce over the top.
- Garnish with additional chopped parsley.
