Easy Cast Iron Shrimp Scampi Recipe
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Freshly grated Parmesan cheese (optional)
- Cooked pasta or crusty bread, for serving
Instructions:
- Prepare the Shrimp:
- Pat the shrimp dry with paper towels and season lightly with salt and pepper.
- Heat the Skillet:
- Heat a cast iron skillet over medium-high heat. Add 2 tablespoons of butter to the skillet and let it melt.
- Cook the Shrimp:
- Add the shrimp to the skillet in a single layer. Cook for about 2 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Pour in the white wine and bring to a simmer. Let it cook for about 2-3 minutes, reducing slightly.
- Combine and Finish:
- Return the cooked shrimp to the skillet. Add the lemon juice and zest. Stir everything together to coat the shrimp in the sauce.
- Sprinkle the chopped parsley over the top and adjust seasoning with salt and pepper if needed.
- Serve:
- Serve the shrimp scampi over cooked pasta or with crusty bread. Garnish with freshly grated Parmesan cheese if desired.
Tips:
- For an extra touch of flavor, you can add a splash of chicken or vegetable broth to the sauce.
- If you like your scampi a bit more saucy, increase the amount of wine and butter.
- Make sure not to overcook the shrimp to keep them tender and juicy.
