Coconut Chocolate Biscuits Recipe
Ingredients
- For the Biscuit Base:
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1/4 cup (30g) desiccated coconut
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- A pinch of salt
- For the Chocolate Coating:
- 200g (7oz) dark chocolate, chopped
- 1 tsp coconut oil (optional, for a smoother coating)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare the Biscuit Dough:
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the desiccated coconut until evenly distributed.
- Shape and Bake the Biscuits:
- Roll tablespoons of dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the back of a spoon.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Prepare the Chocolate Coating:
- Melt the chopped dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Alternatively, you can melt the chocolate using a double boiler method.
- If desired, stir in the coconut oil to achieve a smoother consistency.
- Coat the Biscuits:
- Once the biscuits have cooled completely, dip each biscuit halfway into the melted chocolate, allowing any excess to drip off.
- Place the chocolate-coated biscuits on a piece of parchment paper and let them sit until the chocolate sets.
- Serve and Store:
