Ingredients
For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
For the Cinnamon Sugar Topping:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Prepare the Cheesecake Filling:
- In a medium bowl, beat the cream cheese, sugar, and vanilla extract together until smooth and creamy. Set aside.
- Make the Cookie Dough:
- In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Assemble the Cookies:
- Scoop about 2 tablespoons of cookie dough and flatten it into a disk. Place a teaspoon of the cheesecake filling in the center.
- Take another tablespoon of cookie dough, flatten it, and place it on top of the cheesecake filling. Pinch the edges together to seal the filling inside.
- Repeat with the remaining dough and filling.
- Bake the Cookies:
- Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. The centers may still look slightly underbaked, but they will set as they cool.
- Add the Cinnamon Sugar Topping:
- While the cookies are still warm, mix together the granulated sugar and ground cinnamon for the topping.
- Gently brush the tops of the cookies with a bit of melted butter (optional) and sprinkle the cinnamon sugar mixture over them.
- Cool and Serve:
- Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
