Here’s a simple and delicious recipe for a Chinese-style Beef and Onion Stir-Fry:
Ingredients
For the Beef Marinade:
- 1 lb (450g) beef (such as flank steak or sirloin), thinly sliced against the grain
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
For the Stir-Fry Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sugar
- 2 tablespoons water or beef broth
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green onions, cut into 2-inch pieces (optional)
- 1 red bell pepper, thinly sliced (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, optional)
- Cooked rice, for serving
Instructions
- Marinate the Beef:
- In a bowl, combine the beef with soy sauce, Shaoxing wine, cornstarch, and sesame oil. Mix well and let it marinate for at least 15-20 minutes.
- Prepare the Stir-Fry Sauce:
- In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, Shaoxing wine, sugar, and water or beef broth. Set aside.
- Cook the Beef:
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry until it is just cooked through, about 2-3 minutes. Remove the beef from the wok and set aside.
- Stir-Fry the Vegetables:
- In the same wok, add the remaining tablespoon of vegetable oil. Add the onions and stir-fry until they start to soften, about 2-3 minutes.
- Add the garlic and ginger and stir-fry for another 30 seconds until fragrant.
- If using, add the green onions and red bell pepper and stir-fry for an additional 2 minutes.
- Combine and Serve:
- Return the cooked beef to the wok. Pour the stir-fry sauce over the beef and vegetables, and mix well to combine.
- If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.
- Cook for another 1-2 minutes until everything is well-coated and heated through.
- Serve immediately over cooked rice.
