Chickpea Salad Recipe
Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1 avocado, diced (optional)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Prepare the Vegetables: In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and cilantro.
- Make the Dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper until well combined.
- Toss the Salad: Pour the dressing over the chickpea mixture and toss gently to combine. Make sure all the ingredients are evenly coated with the dressing.
- Add Extras (Optional): Gently fold in the feta cheese and avocado if using.
- Serve: Let the salad sit for at least 10 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
