Here’s a delicious recipe for Chicken with Port and Mushrooms:
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 200g mushrooms, sliced (button or cremini work well)
- 1 cup port wine
- 1 cup chicken broth
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1/2 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown, about 5-7 minutes per side, depending on thickness. Remove the chicken from the skillet and set aside.
- Cook the Aromatics and Mushrooms:
- In the same skillet, add butter. Once melted, add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another minute.
- Add the sliced mushrooms and cook until they release their juices and become golden brown, about 5-7 minutes.
- Make the Sauce:
- Pour in the port wine, scraping the bottom of the skillet to release any browned bits.
- Add the chicken broth and thyme, and bring the mixture to a simmer.
- Return the chicken breasts to the skillet, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has reduced slightly.
- Finish the Sauce:
- Remove the chicken from the skillet once again and set aside.
- Stir in the heavy cream, and let the sauce simmer for another 5 minutes until it thickens. Adjust seasoning with salt and pepper, if needed.
- Serve:
- Return the chicken to the skillet, spooning the sauce over the top to coat.
- Garnish with chopped fresh parsley before serving.
Serving Suggestions:
