Ingredients:
- 2 cups cooked chicken, shredded or cubed
- 12 oz spaghetti
- 2 cups chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) diced tomatoes and green chilies (like Rotel), drained
- 1 small onion, finely chopped
- 1 small green bell pepper, finely chopped
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- 1/2 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Spaghetti: Cook the spaghetti according to the package directions until al dente. Drain and set aside.
- Cook Vegetables: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and bell pepper, cooking until they are softened, about 5-7 minutes.
- Combine Ingredients: In a large mixing bowl, combine the cooked chicken, cooked spaghetti, chicken broth, cream of mushroom soup, cream of chicken soup, diced tomatoes and green chilies, cooked onions and bell pepper, garlic powder, onion powder, salt, and pepper. Mix well.
