Chicken Parmesan
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Italian-seasoned preferred)
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil or vegetable oil
For the Sauce:
- 2 cups marinara sauce (store-bought or homemade)
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Prepare the Chicken:
- Preheat your oven to 400°F (200°C).
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch.
- Season and Bread the Chicken:
- Season both sides of the chicken breasts with salt and black pepper.
- Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
- Dredge each chicken breast in flour, shaking off any excess. Dip in the beaten eggs, then coat evenly with the breadcrumb mixture.
- Cook the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the breaded chicken breasts. Cook for about 2-3 minutes per side, or until golden brown and crispy. The chicken does not need to be fully cooked at this stage.
- Transfer the cooked chicken to a baking dish.
- Assemble and Bake:
- Pour the marinara sauce over the chicken breasts in the baking dish.
- Sprinkle the grated Parmesan cheese over the sauce.
- Top each chicken breast with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
