Cajun Shrimp Scampi Recipe
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 8 oz linguine or spaghetti
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup chicken broth
- 1 lemon, juiced and zested
- 1/2 tsp Cajun seasoning (adjust to taste)
- 1/4 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional for extra heat)
- 1/2 cup unsalted butter, cubed
- 1/4 cup fresh parsley, chopped
- Salt and black pepper, to taste
- Grated Parmesan cheese, for serving
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Shrimp:
- Pat the shrimp dry with paper towels and season with salt, black pepper, Cajun seasoning, smoked paprika, and red pepper flakes (if using).
- Cook the Shrimp:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
- Sauté the Garlic:
- In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.
- Deglaze the Pan:
- Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for about 2-3 minutes, or until the liquid is reduced by half.
- Make the Sauce:
- Reduce the heat to low and add the lemon juice and zest. Gradually whisk in the cubed butter until the sauce is smooth and emulsified. Adjust seasoning with salt and black pepper to taste.
- Combine and Serve:
- Add the cooked pasta and shrimp back to the skillet, tossing to coat everything evenly with the sauce. Continue to cook for an additional 2 minutes until heated through.
- Stir in the chopped parsley.
- Garnish:
- Serve the Cajun Shrimp Scampi hot, garnished with grated Parmesan cheese and additional parsley if desired.
