Broccoli and Cheddar Twice-Baked Potatoes
Ingredients:
- 4 large baking potatoes (russet potatoes work well)
- 1 cup broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons chopped chives (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Bake the Potatoes:
- Scrub the potatoes clean and pierce them several times with a fork.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
- Prepare the Broccoli:
- While the potatoes are baking, steam the broccoli florets until they are tender (about 5-7 minutes).
- Alternatively, you can microwave the broccoli with a bit of water for 3-4 minutes.
- Drain any excess water and set the broccoli aside.
- Cool and Scoop the Potatoes:
- Once the potatoes are baked, remove them from the oven and let them cool slightly so they can be handled.
- Cut each potato in half lengthwise and carefully scoop out the flesh, leaving a thin shell of potato inside the skin.
- Make the Filling:
- In a large bowl, combine the scooped-out potato flesh, steamed broccoli, shredded cheddar cheese, sour cream, milk, butter, garlic powder, salt, and pepper.
- Mash the mixture together until well combined and creamy. Adjust the seasoning to taste.
- Stuff the Potatoes:
- Spoon the filling back into the potato shells, mounding it slightly.
- Bake Again:
- Place the stuffed potatoes on a baking sheet.
- If using, sprinkle the tops with grated Parmesan cheese for extra flavor.
- Return the potatoes to the oven and bake for an additional 15-20 minutes, or until the tops are golden brown and the filling is heated through.
- Garnish and Serve:
- Remove the potatoes from the oven and let them cool slightly.
- Garnish with chopped chives, if desired.
- Serve warm and enjoy!
