Bourbon Chicken with Broccoli Recipe
Ingredients:
- Chicken:
- 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sauce:
- 1/4 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup apple juice
- 2 tablespoons ketchup
- 1 tablespoon apple cider vinegar
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Broccoli:
- 2 cups broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Chicken:
- Season the chicken pieces with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, add the bourbon and cook for 1-2 minutes to reduce slightly.
- Add the soy sauce, brown sugar, apple juice, ketchup, apple cider vinegar, ginger, garlic, and red pepper flakes (if using).
- Bring the mixture to a simmer and cook for 2-3 minutes to let the flavors meld together.
- Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
- Cook the Broccoli:
- In a separate skillet or in the microwave, cook the broccoli florets until they are tender but still crisp. If using a skillet, heat 1 tablespoon of olive oil and sauté the broccoli with a pinch of salt and pepper for about 3-4 minutes.
- Combine:
- Add the cooked chicken back into the skillet with the sauce.
- Toss to coat the chicken in the sauce.
- Add the cooked broccoli and stir to combine.
- Serve:
- Serve the bourbon chicken and broccoli over steamed rice or noodles.
- Garnish with sesame seeds and chopped green onions if desired.
