Blueberry Fritter Bites: Baked Morning Delights
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/3 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 2 tbsp unsalted butter, melted
- Powdered sugar for dusting
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Add Blueberries: Gently fold in the fresh blueberries into the batter.
- Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake: Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of a fritter bite comes out clean.
- Cool: Allow the fritter bites to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Dust with Powdered Sugar: Once the fritter bites are cool, dust them generously with powdered sugar.
