Here’s a delicious recipe for banana cake that you can easily make at home:
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2-3 bananas)
- 1/2 cup buttermilk
For the Frosting:
- 1/2 cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 3-4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (optional, for consistency)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
- Prepare the Cake Batter:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Add the mashed bananas and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Bake the Cake:
- Pour the batter into the prepared pan(s) and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the cake to cool in the pan(s) for 10 minutes. Then, transfer to a wire rack to cool completely.
- Prepare the Frosting:
- In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Mix in the vanilla extract. If the frosting is too thick, add milk one tablespoon at a time until the desired consistency is reached.
- Frost the Cake:
- Once the cake is completely cool, spread the frosting evenly over the top and sides of the cake.
- Slice, serve, and enjoy!
Tips:
- For extra flavor, you can add chopped nuts (such as walnuts or pecans) or chocolate chips to the batter.
- If you prefer a less sweet cake, reduce the amount of sugar in the batter and/or frosting.
Enjoy your homemade banana cake!
