Baked Chicken Thighs Recipe
Ingredients:
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven:
- Preheat your oven to 425°F (220°C).
- Prepare Chicken:
- Pat the chicken thighs dry with paper towels. This helps the skin get crispy when baking.
- Make Seasoning Mixture:
- In a small bowl, combine olive oil, minced garlic, paprika, thyme, oregano, onion powder, salt, and black pepper.
- Season Chicken:
- Rub the seasoning mixture all over the chicken thighs, making sure to get under the skin as well for maximum flavor.
- Arrange in Baking Dish:
- Place the seasoned chicken thighs in a single layer in a baking dish or on a rimmed baking sheet. Arrange lemon slices around the chicken.

- Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown. If the skin isn’t as crispy as you’d like, you can broil the chicken for an additional 2-3 minutes.
- Rest and Serve:
- Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with freshly chopped parsley.
