Here’s a traditional recipe for Australian Anzac Biscuits. These biscuits are a beloved treat in Australia and New Zealand, often made to commemorate Anzac Day.
Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup sugar
- 3/4 cup desiccated coconut
- 125g (4.4 oz) butter
- 2 tablespoons golden syrup
- 1/2 teaspoon bicarbonate of soda (baking soda)
- 1 tablespoon boiling water
Instructions
- Preheat your oven: Preheat the oven to 160°C (320°F) and line two baking trays with baking paper.
- Mix dry ingredients: In a large bowl, combine the rolled oats, plain flour, sugar, and desiccated coconut.
- Melt butter and golden syrup: In a small saucepan over low heat, melt the butter and golden syrup together. Stir until fully combined and smooth.
- Add bicarbonate of soda: Dissolve the bicarbonate of soda in the boiling water and then add to the butter and golden syrup mixture. Be careful, as it may froth up.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and mix thoroughly until combined.
- Shape the biscuits: Roll tablespoons of the mixture into balls and place them on the prepared baking trays. Flatten each ball slightly with the back of a spoon.
- Bake: Bake in the preheated oven for about 15-18 minutes, or until golden brown. Keep an eye on them to ensure they don’t overcook.
- Cool: Allow the biscuits to cool on the trays for about 5 minutes before transferring them to a wire rack to cool completely.
Enjoy your homemade Anzac Biscuits! They are great with a cup of tea or coffee.
