Here’s a simple and delicious recipe for Turkish bread, known as “Ekmek”:
Ingredients
- 500g bread flour
- 2 tsp salt
- 2 tsp sugar
- 1 packet (7g) active dry yeast
- 300ml warm water
- 2 tbsp olive oil
- 1 tsp nigella seeds (optional)
- 1 tsp sesame seeds (optional)
Instructions
- Prepare the Yeast Mixture:
- In a small bowl, mix the warm water and sugar, then sprinkle the yeast on top. Let it sit for about 10 minutes until it becomes frothy.
- Mix the Dough:
- In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms. If the dough is too sticky, add a little more flour; if it’s too dry, add a bit more water.
- Knead the Dough:
- Turn the dough out onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.
- First Rise:
- Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Shape the Dough:
- Once the dough has risen, punch it down to release the air. Turn it out onto a floured surface and shape it into a round or oval loaf.
- Place the shaped dough onto a baking sheet lined with parchment paper.
- Second Rise:
- Cover the loaf with a damp cloth and let it rise for another 30-45 minutes.
- Preheat the Oven:
- While the dough is rising, preheat your oven to 220°C (430°F).
- Bake the Bread:
- Before baking, you can brush the loaf with water and sprinkle with nigella and sesame seeds if desired.
- Make a few slashes on the top of the loaf with a sharp knife.
- Bake in the preheated oven for about 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Cool the Bread:
- Let the bread cool on a wire rack before slicing.
